Ok, so normally I post about invitations and my wonderful clients I deal with, but today I thought I would share the love. I mean really, how beautiful does this look?
Yep I had company yesterday and didn't have time to make the usual fair so I decided on an easy comforting meal of hearty Potato Soup. By the way, I couldn't even believe how gorgeous the picture came out, I always have such trouble with photos, I had to share this. So you have got to try this recipe out and let me know what you think. Its my own and it was heavenly!
What you will need
1 Bag of Potatoes (I used a 5 pound bag) peeled and roughly chopped
5 Links of Hot Italian Sausage (skin removed)
1 can of Condensed Milk
2 TBSP of Flour
4 Stalks of Celery (finely chopped)
1 & 1/2 Onions (finely chopped)
4 Cloves of Garlic (minced)
Cheese, lots of cheese
1/2 Cup of Butter
1 Chicken Bullion Cube
1 TBSP of Olive Oil
1 TSP Cumin
1/2 TSP of Cayene Pepper (or more)
Water (enough to cover)
Salt and Pepper to taste
Green Onions
Cheese
Bacon Bits/Chopped Bacon
6 Bread Bowls
In a pot combine 1/4 cup of butter and olive oil on low heat, Once the butter is melted, add the onions celery and garlic. Once the onions are translucent, add the sausage and cook till sausage is no longer pink. Add your seasoning and mix well.
Add potatoes and enough water to cover potatoes completely. Try not to add too much water, you don't want it to be to watery. Add your bullion cube, and let it cook till it boils.
Meanwhile, prepare your bread bowl. Cut the top out and core out the inside, bake in a 400 degree oven to toast.
In a small sauce pan, melt your remaining butter and add flour to make a roux, add the full can of condensed milk, heat enough to make sure the flour is no longer clumpy and smooth.
Once the potato mixture has come to a complete boil and the potatoes are softend, add the flour mixture. Let boil for another 10 minutes.
Puree the mixture leaving plenty of chunks of potatoes, if the mixture is too think, you can add some more water to loosen it a bit (trust me, when I made mine it was looking like mashed potatoes till I added some more water), add 1 to 2 cups of cheddar cheese, wait till it is melted.
Time to plate it up, serve in your bread bowls or regular bowls, top with more Cheese, Green Onions and and Bacon. And enjoy.
Word of caution, once you make this, you will be asked for it regularly!
By the way, I always make way too much food, so you can adjust this recipe to fit your tastes. As usual I would of had a ton of left overs but my guests took a bunch home.
